Brown Sugar Cookies
Ingredients
2 ¼ cup All Purpose flour
¾ cup Light Brown Sugar
1 large Egg
1 cup Room Temperature Unsalted Butter
1 tsp Vanilla Extract
½ tsp Baking Powder
½ tsp Salt
½ cup White Sugar
Oven Preheat to 350°F
Instructions
1. In a large bowl, whisk together butter and brown sugar till smooth. Make sure the butter is room temperature or it will not work.
2. Once the sugar butter mixture is smooth, add 1 large egg and vanilla extract to the bowl and whisk till smooth. Set aside.
3. In a separate large bowl, sift flour, salt, and baking powder together. Once the dry ingredients are ready, introduce the wet mixture to the bowl. Mix everything together till well combined. Once the dough is formed, place the bowl in the fridge for 30 min before start making cookies. It is to solidify the fat (aka, butter) in the dough so the cookies do not spread in the baking process. Be patient.
4. (30 minutes later) There is a couple ways to get cookies to equal size so they are evenly baked in the oven. You can use an ice cream scoop, a melon baller, eye-balling it, or a kitchen scale. I used to kitchen scale because I am very bad at eye-balling cookies and meatballs. I had each cookie dough scaled to 40 grams, use my hands to form a ball and it made 14 cookies. If you want larger cookies, you can. 40 grams was perfect for me. Roll each cookie dough in sugar then place on a baking sheet with parchment paper on top of the baking sheet to prevent from sticking.
5. Use a fork to press down the dough slightly to make marks. Sprinkle any left over sugar on top of the cookies because why not.
6. Bake the cookies in 350°F oven for 10 -12 min depends on your oven. Check on it when the time comes close to see if they need more or less time.
7. Remove from the oven and place cookies on a cooling rack.
CreamCheese Cookies
Ingredients
1 ¾ cup All Purpose flour
½ cup Room Temperature Butter
3 oz. Room Temperature Cream Cheese (I had slightly under 3 oz. cream cheese so I add a little sour cream to make it 3 oz.) 1 ½ cup Confectioner's Sugar
1 Room Temperature Egg
½ tsp Almond Extract
a little zest of a Lemon
Oven preheat to 375°F
Instructions
1. In a large bowl, whisk together butter and cream cheese. Make sure the butter is room temperature or it will not work. Slowing add in sugar, continue mixing till smooth.
2. Once the mixture is smooth, add 1 egg, almond extract, and sift flour and baking powder in and whisk till fluffy.
3. Just like the Brown Sugar Cookies, once the dough is formed, place the bowl in the fridge for an hour before start making cookies. It takes longer for this dough because of cream cheese.
4. (An hour later) Form each cookie dough to 40-gram balls. Make sure they are 2 inches apart from each other. Now use your index finger or a tea spoon for this next step: gently press the top of the cookie dough down. Not to flatten the dough, but to make a slight indentation on top so the cookies form a dome shape top in baking process.
5. Place the baking sheet in 375°F oven for 10 minutes. Cookies will look pale and under baked but they are not. Leave them on the baking sheet for a few minute before transferring to a cooling rack. Once cooled complete, sift confectioner's sugar on top of the cookies.
6. Enjoy with some coffee or tea!
