Honeycomb Crumbles [df/v/gf]

This Honeycomb recipe was trending during Quarantine so I decided to give it a go. Turns out it is extremely easy, delicious and fun to make! My friend, who was quarantined with me at the time, loved it so much, asked me to make a couple extra. Here is how to make it:

Ingredient

½ cup White Sugar

2 Tsp Light Corn Syrup

2 Tsp Water

1.5 tsp Baking Soda


Tools

Silicon spatula

Parchment paper

A mold of some kind or a glass pie dish

A sauce pan

A thermometer


Science

So the science behind this lovely treat is the heat and baking soda. Baking soda creates bubbles when encounters heat and foams up. Once cools, bubbles are trapped inside to create this phenomenon. Be ware that it is extreme high heat (300°F). Protection is needed while making this.


Instruction

  1. In a sauce pan, add sugar, corn syrup, and water together and whisk over medium heat. Carefully place the thermometer to monitor the temperature.

  2. Mixture will start to bubble very quickly. Keep an eye on it and the temperature. At this point, you can stop whisking and just let it heat up slowly. Mixture will slowly thickens and clears up. While waiting for it to cook, place a sheet of parchment paper over the pie dish and have a spatula ready next to it.

  3. Careful not to over heat and burn the mixture. Once the temperature reaches 300°F, add baking powder to the mixture and whisk everything together quickly.

  4. Now quickly grab the spatula and transfer the hot mixture to the lined pie dish. Careful not to burn yourself and not to pop any bubbles.

  5. Allow it to cool for half an hour or so. The mixture will harden once cools. After that, grab the parchment paper by the edges and drop it to the counter to break into smaller pieces.
