Loco for Moco


Disney released some of its famous Magic Kingdom specialty recipes during the quarantine to remind us even in the most quiet day, a spoonful of sugar sure can make the situation better. One of my favorite Disney food items is Tiki Room's Dole Whip. I remember waiting in line for The Tiki Room while sipping that icy cold Dole Whip with my friends on a hot California Summer day. Honestly the best thing in the world. And what goes best with Dole Whip? Loco Moco!

DISNEY’s DOLE WHIP

Ingredients

1 big scoop of Vanilla Ice Cream

4 oz Pineapple Juice

2 cups Frozen Pineapple


Instructions

It is very simple: just blend everything together and then put the smoothie in a hallow pineapple shell. Put on your best Hawaiian shirt and Bam! Now you’ve got yourself some tiki good time!


LOCO MOCO

Ingredients

2 cups of Rice with 2 cups of Water

1 can of SPAM

2 - 4 fresh Eggs

1 cup minced Onion

S&P to taste

1 lb Ground Beef

1 Tsp Butter

some Natural Oil

1 ½ cup Beef Stock

some Flour to make roux

1 cup sliced White or Brown Button Mushrooms

1 minced Garlic. Optional: minced scallions, a dash of paprika for decoration.


Instructions

There’s 5 layers to Loco Moco.

1. Cooked rice: try to mold it as pretty as possible or not. If you want a pretty dome shape rice on the plate, here's how: Start by putting rice in a rice bowl, gently press down the rice. Place a plate that is larger than the rice bowl, flip the plate and the bowl, tap the bowl a couple times to let rice drop. Remove the bowl after that.


2. Pan fried spam slices: As many slices as you like but don’t forget the main star here is the patty and gravy. Ok, maybe the egg too.


3. Egg: Add oil in a hot pan to coat the bottom. Once pan is hot, add egg then reduce heat to med-low. Yes, of course you can have 2 eggs if you like. You are the Master Moco. Set egg(s) aside.


4. Patty: In a hot sauce pan, add 1 cup minced onion, salt, sauté till transparent. Set aside to cool. Once onion is cool, add onion and oil mixture to ground meat. Add S&P. Use your hand to mix it all together. If too dry, add some water, continue mixing till combine. Divide mixture to 4 equal amount, form a ball with your palm. Grease a hot pan and add meatballs to the pan then press the meatballs down with a spatula. Let cook for 2 min then flip the patties and let cook for another 2. Set aside.


5. Gravy: Remove excess oil from the pan, add 1 minced garlic to the pan, cook till fragrant, then add 1 cup of sliced mushrooms. Stir and let cook for a few min, add S&P. Add 1 Tsp butter to the pan, once butter melts, sprinkle some flour to make roux (=like a light color dough). Pour in 1 ½ cup beef stock, use a spatula to mix till smooth and gravy thickens. Set aside.


TO ASSEMBLE

Add rice to a plate, then patties, then spam, mushroom gravy, egg on top. To finish, sprinkle paprika powder on egg and sprinkle chopped scallions on top.
