Orange Coconut Bread Pudding with Caramel Sauce

Bread pudding is the only dessert that my family serves at Christmas table. My brother, who does not like sweet things, loves bread pudding. My bread pudding. I love to add different things to it to make it different from the last one. Of course, booze is one of them. There are so many things that can go in bread pudding and still makes it great. Be creative to come up with something your family will love!


Today, we are making Orange Coconut Bread Pudding with Caramel Coconut sauce. No alcohol in this one (or is there?). Serve with your favorite ice cream or whipped cream and powder sugar. Have it as breakfast the next day (why not. It's all eggs and bread!). Everyone loves a great bread pudding!


Ingredient

3 cups Milk

1 cup Cream

1 ½ cup sugar

2 Orange Zests

1Tsp Concentrate Coconut syrup

6 Egg Yolks

2 Large Eggs

1 Loaf of bread, cut into 1 inch cubes

[Let me explain: there are some recipes called for Brioche, Croissant, or French Bread. Honestly, I just use whatever leftover bread I have at home (except toasts, you don't want that).]

Butter

3 Tsp Coconut Flakes, Untoasted

Preheat oven to 350°F


Instruction

  1. In a sauce pan, heat up milk, cream, sugar, orange zest, and coconut syrup over med-low heat till sugar dissolves. Set aside, let cool.

  2. In a casserole pan, use a butter stick to grease all sides inside to prevent sticking. Add bread cubes to casserole pan and set aside.

  3. In a large bowl, whisk eggs and egg yolks together. Slowly pour milk mixture to the eggs. Milk mixture needs to be cool enough to touch because if it is still hot, you will get scramble eggs, which we do not need for this dessert. Whisk till smooth and well combine.

  4. Next, pour the wet mixture over the bread cubes. Press down if bread cubes start to float. Sprinkle coconut flakes all over if some ended up in the mixture, that's fine. Leave it to soak for at least an hour. (I have left it overnight once and it tasted the same.) Remember all bread cubes must be soaked through and soft.

  5. Once you feel the bread is ready, bake in the oven for an hour. Bread will puff in the oven and once cools, will collapse a little.

Sauce

All of the Orange Juice from the Orange before

1 cup Cream

1 cup Sugar

Pinch of Salt


Add cream, sugar, and salt to a sauce pan and heat up cover med-low heat. Keep whisking till it thickens to sauce texture. Add orange juice and continue whisking for a few more minute till the sauce thickens again. Turn heat off. Drizzle over bread pudding and serve.
